Try out these healthy Quinoa Chocolate Chip Cookies. They make great snacks for the entire family!
Ingredients:
- 2 tbsp organic cane sugar (or use white sugar)
- 1/2 cup sucanat
- 1/2 cup organic unsalted butter softened
- 1/2 tsp vanilla extract
- 1 egg
- 3/4 cup flour (whole grain spelt or kamut or combine both)
- 1&1/2 tbsp coconut flour (optional)
- Pinch of cinnamon powder
- 1/8 tsp xantham gum
- 1/2 tsp baking soda
- 1/2 cup chocolate chips (semi-sweet or 70% dark)
- 1 cup quinoa flakes
- 1/4 tsp salt ( if using unsalted butter)
Directions:
- Preheat oven to 350 degrees F (175 degrees C).
- Cream together butter, cane sugar, and sucanet until smooth. Beat in the egg, then stir in the vanilla.
- Combine flour, baking soda, cinnamon, salt, xantham gum, and quinoa flakes in a separate bowl.
- Mix the dry ingredients into the wet ingredients using a spatula.
- Stir in the chocolate chips.
- Drop by large spoonfuls onto greased pan.
- Bake for about 12 minutes in the preheated oven, or until edges are nicely browned.
Makes 24 cookies
Alternative: for a more nutrient-rich option, you can replace chocolate chips with goji berries or dried blueberries
